Eggplant – a Turkish vegetable favourite
Eggplant is a favourite vegetable of the Turkish people. The Turkish eggplant has more flavour, is thinner and longer than the large, round shaped versions often found in North America. However, I have noticed that Iranian food stores are starting to sell smaller varieties, much like those found in Turkey.
A classic Turkish dish, imam bayildi is eggplant stuffied with onions, garlic, parsley and chopped, skinned tomatoes and gently stewed in olive oil. This dish is most often served cold with fresh bread.
